Low Fat Rhubarb Cake

½ cup of butter
½ cup of organic sugar
1 cup of brown sugar
½ cup of apple sauce
1 egg
1 cup of low fat butter milk
1 tsp salt
1 tsp baking soda
1 tsp vanilla
2 cups flour
2 cups diced fresh rhubarb

Topping

½ cup brown sugar
1 tsp cinnamon
½ tsp nutmeg
½ chopped nuts, optional
 
Preheat oven to 350 degrees. Spray a 9 x 13 inch baking pan. In a large bowl, cream together sbutter, sugar, and brown sugar. Add egg and mix well. Add buttermilk, salt, baking, soda, and vanilla. Mix well. Stir in flour until well mixed. Stir in rhubarb. Spread into pan.
 
In a small bowl, mix brown sugar, cinnamon, nutmeg, and nuts. Sprinkle over batter. Bake for 30 - 40 minutes or until set in the middle and lightly brown. Do not over-bake.
 
Serve with a dollop of maple syrup sweetened yogurt cheese.
