Pinot Noir Cranberry Sauce Recipe
Serves 4

This cranberry sauce is delicious with turkey, chicken and duck. It is also excellent served with goat cheese, caramelized onions and a salad.

1 lb fresh cranberries
3 shallots, minced
1/2 cup pinot noir
2 cinnamon sticks
2 pieces star anise
5 cloves
5 cardamom pods
juice and zest of 3 oranges
1/4 cup buckwheat honey (or any honey of your choice)
1 tsp grapeseed oil
5" x 5" piece of cheesecloth and string

Directions:


Place the cinnamon sticks, star anise, cloves and cardamom in the cheesecloth and tie into a small bundle. Set aside.

Place the oil in a medium pot over medium heat. Add the shallots; cook for approx. 10 minutes, allowing the shallots to brown and caramelize. Add the wine, orange juice, zest and honey to the pot. Bring to a simmer: add the bundle of spices. Add the cranberries to the pot. Bring to a boil and reduce heat. Let the mixture simmer until the liquid has reduced. At this point, you may choose to add more honey if the mixture is too tart.

Serve hot or cold.
