Savoury Blueberry Chutney Recipe
Serves 4
We usually serve this chutney with venison but it is also delicious with beef, chicken or salmon.
1 lb fresh (or frozen) blueberries
2 shallots, minced
2 garlic cloves, minced
1 tbsp fresh ginger, minced
1 tsp toasted ground cumin
1/2 tsp ground juniper berries or allspice
1/2 cup white wine
salt and pepper
2 tsp grapeseed oil
Directions:
Add the oil to a small pot over medium heat. Add the shallots; cook until the shallots become translucent. Add the ginger and garlic; cook for a further 3 minutes. Add the cumin and juniper berries (or allspice). Add the wine and let reduce slightly. Add the berries all at once. Let the mixture cook until it is not longer runny; approx. 15 minutes. Season with salt and pepper.
